Ingredients You’ll Need

  •  2 medium zucchinis (spiralized into noodles)  
  • 1 lb shrimp (peeled and deveined)  
  • 3 tbsp unsalted butter
  • 2-3 garlic cloves (minced)  
  • tbsp olive oil
  • 1/4 cup Parmesan cheese
  • Salt and pepper to taste
  • Optional garnishes: Fresh parsley, red chili flakes, or a squeeze of lemon juice  


How to Make Zucchini Noodles with Garlic Butter Shrimp

Step 1: Prep Your Zoodles

Spiralize your zucchini into noodles. If you don’t have a spiralizer, you can use a julienne peeler. Salt the zoodles lightly and let them sit for 5-10 minutes to draw out the water. Once they’ve softened, pat them dry with a paper towel.  


Step 2: Cook the Shrimp

Heat olive oil in a large skillet over medium heat. Season the shrimp with salt and pepper, then cook them for 2-3 minutes on each side, or until they turn pink and opaque. Remove them from the skillet and set aside.  


Step 3: Make the Garlic Butter Sauce

In the same skillet, reduce heat to medium-low and melt the butter. Add the minced garlic and sauté for 1 minute, stirring constantly to avoid burning.  


Step 4: Cook the Zoodles

Add the zucchini noodles to the skillet and toss them in the garlic butter sauce. Cook for 2-3 minutes until the zoodles are tender but still a little firm.  


Step 5: Combine and Serve

Return the shrimp to the skillet, tossing everything together. Sprinkle Parmesan cheese over the top and mix it in. Garnish with parsley or red chili flakes, if desired. Serve immediately and enjoy this tasty, low-carb dish!
